paired with ‘bubbles’ Sparkling Fiano
The key to this recipe is to make as fresh as you can: so ideally prepare and cook straight away. They are an absolute delight with the delicate flavours of the GREENWAY Fiano bubbles.
- 2 Zucchini - grated.
- 1/2 Fennel - grated
Finely chopped and mixed up
- 2 eggs
- 1 tablespoon plain flour
- 2 tablespoons of Rice flour
Salt the zucchini and Drain in a colander and squeeze out the liquid
Mix with above
Deep fry to a golden brown
- 3 Tablespoons of good quality mayo
- 1/2 clove garlic minced
- Zest of 1 orange
- 1 Tablespoon orange juice
- 1 teaspoon mustard
Whisk together until well combined.
Top the crisp zucchini fritters with a dollop of rouille then garnish with fresh dill and cracked black pepper
