Food Pairing

Check in with us from time to time as we plan to progressively build a collection of food and wine pairings for you to try. The recipes that follow are our suggestions for dishes that will delight the senses, heighten your experience and offer a chance to truly appreciate the wines our vineyard creates.

paired with ‘bubbles’ Sparkling Fiano

The key to this recipe is to make as fresh as you can: so ideally prepare and cook straight away. They are an absolute delight with the delicate flavours of the GREENWAY Fiano bubbles.

Ingredients

  • 2 Zucchini - grated.
  • 1/2 Fennel - grated

Finely chopped and mixed up

  • Dill
  • Coriander
  • Mint
  • 2 eggs
  • 1 tablespoon plain flour
  • 2 tablespoons of Rice flour

 

Methode

Salt the zucchini and Drain in a colander and squeeze out the liquid
Mix with above
Deep fry to a golden brown

 

Orange Rouille

Ingredients

  • 3 Tablespoons of good quality mayo
  • 1/2 clove garlic minced
  • Zest of 1 orange
  • 1 Tablespoon orange juice
  • 1 teaspoon mustard

Methode:

Whisk together until well combined.

To Plate

Top the crisp zucchini fritters with a dollop of rouille then garnish with fresh dill and cracked black pepper
